Good morning Friends! What did you eat this morning for breakfast? Did you skip it? Just a cup of coffee? Some kind of sugary treat?
If your breakfast wasn’t the healthiest, you are not alone. I, myself, have not been caring lately for my body very well when it comes to breakfast. Lots of folks enjoy the smoothie movement as a way to fit in a few servings of produce and I have experimented with several versions. Some days when I don’t have the energy or brain power to get creative. Those are also the days when I am more likely to take a short cut to a pastry for breakfast.
So when I’m uninventive, this is one of my healthy standbys. It is a banana blueberry smoothie that takes just a few minutes and only four ingredients. I adore blueberries and between those and the banana there is no need for any additional sweeteners. It also gives me an iron boost from the spinach. You can use whatever liquid you like: milk, almond milk, water, etc.
Quick Blueberry Banana Smoothie
1 cup spinach
1 cup of frozen blueberries
1-2 cups of milk (or other liquids)
Load all ingredients into a blender and process until well incorporated and smooth. More or less liquids can be used depending on the thickness desired.
