I am craving some favorite comfort foods lately! I have decided to resurrect this post today because I’m loving on the granola thing again this week and I thought some of you might need some it your life. I hope you enjoy!
Mmmmmm…breakfast! One of my favorite meals of the day. I love all kinds of breakfasts but one thing that is a meal and a treat is granola. In my house if I want to get enough of it, I have to tell the children that it is off-limits mama granola. Otherwise they can polish it off before your very eyes! Store bought granola is good but in my opinion it is almost always too sweet. Today I am sharing with you one of my favorite hearty granola recipes. I try to make tons of this at a time so I can share it with the kiddos and it will last longer than a day and a half. Of course if I didn’t eat it for breakfast, afternoon snack, and dessert, it might nit disappear so quickly. 🙂 (and my waistline would like it if I put on the brakes!)
So without further ado, here is my standby recipe. It is wonderfully customizable. Just remember, you can vary it in countless ways with different levels of sweetness and different add ins. It all depends on what you like!
Best Granola Recipe
5-6 cups of old-fashioned rolled oats
add 5-6 cups total of any or all of these:
Soy flour, whole wheat flour, wheat germ, rolled wheat flakes, sunflower, pumpkin, or sesame seeds, non-fat dry milk powder, shredded coconut, unsalted nuts
add to dry mixture:
1 teaspoon of salt
2 teaspoons of cinnamon
Heat in a large roasting pan:
1 cup of oil or 2 sticks of butter
1 cup of honey, molasses, or maple syrup, or any mixture of these
1/2 cup of water
2 teaspoons of vanilla or almond extract
When the liquid mixture is warm and thinned, begin adding dry ingredients; stir each in well with a large wooden spoon. Here’s one situation where “too many cooks” are an asset! Let all the helpers have a turn!
Granola may be toasted right in the roasting-mixing pan. Set oven at 250 and bake approximately 2 hours, stirring every 20 minutes. You may also spread the mixture on cookies sheets too, for shorter baking time (about 30 minutes at 325) Turn with a spatula at 10 minutes. Watch carefully until done to your family’s taste; remember granola becomes crisper as it cools in the pan. When the granola is cool, stir in your other add ins. The quantities of this recipe can easily be adjusted up or down. This makes about 14 cups.
…feel free to stir in anything you like – raisins, dried cranberries, other dried fruit, nuts, coconut, even chocolate!
Serve this with fruit, yogurt, sprinkled over ice cream, or straight with milk. The possibilities are endless!!
